The farm in Fosdinovo , where the winery is located, has been owned by Francesca Pascale's family since 1992, right here the Colli Di Luni Vermentino Doc "Aedo" is born, a white wine produced from 100% Vermentino grapes and completely under organic .

This is the most important and ambitious Vermentino of Francesca Pascale's wines, the fermentation on the skins in rough cement tanks lasts for about 5 days and the subsequent maturation for several months.

A white of exceptional aromatic tension , the result of a particularly respectful approach to the raw material, it is no coincidence that Aedo comes from a selection of the best grapes from a single vineyard, beautifully exposed, a white that is already exquisite today but capable of surprising even on the medium term, 5/7 years after the harvest, maybe more!

Vinification and Aging

The vinification method involves the pressing of the whole grape and the decantation of the must with spontaneous fermentation in rough concrete at a controlled temperature. The refinement takes place in raw cement barrels for five months on its lees .
