Valpolicella Ripasso "Le Morete" is a red wine from Cantina Manara that many define as "the younger brother" of the more famous and renowned Amarone.

The name " Ripasso " derives from the ripasso technique which consists in the resumption of fermentation on the still wet marcs of Amarone della Valpolicella, the result is this wine which shows itself as the right synthesis between the power of the famous Veronese raisin wine and the versatility of the classic Valpolicella.

The bouquet is surprising in breadth and intensity , merging the notes of plums, black cherries, pepper and ginger, while in the mouth it is complex , harmonious and slightly tannic .

Why you should drink it

Because thanks to the manufacturing process it is a unique wine , endowed with a remarkable personality.

A wine to be discovered absolutely.

When to uncork it

I suggest you try it with grilled pork, polenta with game stew and quite spicy cheeses .

How to drink it

Uncork it and let it breathe for a few minutes , to be served at a temperature of 16-18°C .

Vinification and Aging

Soft pressing immediately after harvesting and fermentation in stainless steel tanks, then, after racking off the Amarone and Recioto which generally takes place in March, the wine obtained previously is placed on the marc for a second fermentation . It is aged in Slavonian oak barrels and French oak barriques for about 12 months and then aged in the bottle for about 6 months.

Particular vineyard , called in dialectical jargon " Le Morete ", located in the hills of the Valpolicella Classica, in the municipality of San Pietro in Cariano , in the province of Verona.

The soil is clayey on a basaltic subsoil which guarantees fantastic drainage but never stagnation of water.
