Description

Casanuova delle Cerbaie 's Brunello di Montalcino Docg is a red wine from Montalcino , in the province of Siena , in Tuscany .

The history of Casanuova delle Cerbaie has its roots in the 1980s , when a woman of German origins decides to give shape to her love for viticulture by starting to grow vines and produce wine in Montalcino. In 2008 the company was bought by a New Yorker in love with Tuscan wine, which he leads with the idea of “ little but good ”. Although Casanuova delle Cerbaie is a medium-sized company , the bottles produced are around 35,000 , as a sign of the desire to limit production to give life to great wines .

In Casanuova delle Cerbaie everything is done by hand : harvest , selection of the grapes, vinification and bottling .

The result of this painstaking work is a Brunello di Montalcino - 100% Sangiovese - structured , intense and enveloping , soft and elegant . A full- bodied Brunello in which palpable ripe fruit and the tertiary aromas typical of long-aged wines blend perfectly with the sweet flavors of wood and its tannins .

Why you should drink it

The story of Casanuova delle Cerbaie is a story made of cultural exchanges and love for Tuscan wine , and Brunello di Montalcino is its highest expression . A wine made by those who are moved by a passion and are willing to move overseas to satisfy it. From those who know the flavors of the world and internationality , but decide to devote themselves totally to a single traditional grape , Sangiovese , to accompany it towards its peak .

We just have to taste this passion and enjoy it .

When to uncork it

You are faced with a Brunello di Montalcino , one of the best known wines for its great aging capacity, intensity , structure and importance . Just think about the fact that from harvest to marketing , a Brunello must necessarily spend at least 5 years in the cellar , of which at least 2 of aging in wooden barrels.

All this to tell you that for me the funniest thing to do is to have two bottles : one to drink young enough , to understand the panache , the cazzimma and the potential , the other to forget in the cellar , taste again after years and be amazed by the balance and the aromas that this wine is able to develop .

But, more importantly, Casanuova delle Cerbaie 's Brunello di Montalcino is a red for important occasions , to be opened when the only things that matter are to celebrate and drink well .

How to drink it

If you happen to drink it with a few years on your shoulders , I suggest you open it even before you start cooking : give it time to breathe and bring out all its most hidden qualities .

In any case , drink it at a structured red temperature , around 20 ° .

Vinification and Aging

The harvest is done manually , selecting only the best bunches . After a further selection , made in the cellar, the bunches are de- stemmed .

During the first stages of fermentation , numerous pumping over are carried out, and then the must is left in quiescent maceration on the skins , at a controlled temperature . After racking, the wine is aged for 30 months in Slavonian oak barrels and then bottled. It rests in the bottle for at least six months in an air-conditioned room.

Territory

The Casanuova delle Cerbaie vineyards are located between 250 and 350 meters high and develop from the prestigious hill of Montosoli to the foot of the hill that gives life to the town of Montalcino. In all, the company has 15 hectares of land , of which 10 are planted with vineyards ( exclusively of Sangiovese vine ), 2 of olive groves and 3 of woods and arable land. The south-west exposure of the vineyards allows the plants to receive sunlight for most of the day and to be sheltered from the coldest and hottest winds, for the benefit of the vine and its fruits.

Clayey soil characterized by limestone and marly rocks.
