Description

We are in Pradis , in the middle of the Collio hills , in Friuli Venezia Giulia : here in 1937 the " Carlo di Pradis " winery was born, founded by Gigi , father of Carlo and grandfather of Boris and David , who today carry on with passion the work of one's family .

Pradis Ribolla Gialla Collio DOC is one of the results of these splendid vineyards : it has a straw yellow color with greenish reflections , a pleasantly fresh nose , citrus notes of cedar , spring flowers and acacia .

The taste , on the other hand, is lively , with notes of rennet apple and green melon that emerge with a pleasantly acid aftertaste .

Why you should drink it

Because drinking the wines of the Carlo di Pradis winery means becoming part of their world , letting yourself be transported among the rows , tasting ripe grapes and getting to know their family and their values .

This Ribolla Gialla Collio DOC will therefore not only tell you about Friuli Venezia Giulia and Collio , but will give you a personal vision of who lives and works in these places every day.

When to uncork it

This Ribolla goes well with aperitifs , appetizers and fried fish and is perfect with sardines, oysters and sea truffles.

So in short: if you have to invite someone to drink it with you, make sure it is a special occasion !

How to drink it

The right temperature to best enjoy this white is around 10-12 ° C.

Vinification and Aging

The vinification takes place through a soft pressing with a pneumatic press . This is followed by a static cleaning of the musts with decantation at 10-12 ° for 48 hours , racking and the subsequent start of fermentation in steel barrels at a temperature of 14-16 ° . At the end of fermentation , decanting is done to remove the heavier lees , the barrels are filled and refined in the same , until bottling with weekly " battonage " to keep the yeasts in suspension .
