Cavallina is atimorassoof structure and personality: expect afull-bodied whiteAndaustere, with a fine but well perceptible minerality, the classic "biancone" but offinessefromchampion.
ThistimorassoCavallina is onetruepearl, because it can be bothmarvelousAndcomplexdrunktoday, like a very greatgiftthat you can make yourself by uncorking it in 5/10 years: both choices are more than valid.
Compared to other timorasso selections I findCavallinaof afinesseandelegancerarefor each "rival", a wine fromsave to favorites.
Cavallinait is a wine of finesse and elegance, almost "feminine": I imagine itafterawalkhand in hand with yourssweeta halfunder the first timid winter suns, a late morning sip,to drink with the right person.
Cavallinais a timorasso damomentshappy, the right temperature is that of a structured white, too cold distorting it, almost better a few degrees more. If you can, keep this wine in the cellar below the house, otherwise in the fridge but no more than half an hour before uncorking the bottle.
ThegrapesI'mcollectedin September,pressedAndfermentedwith its own indigenous yeasts after onemacerationprolongedat very low temperatures. L'refinementit is exclusively in large tanks.
The Colli Tortonesi denomination is made up of thirty municipalities located in the southeastern part of Piedmont, all having a common denominator: thepredispositiongeologicalAndclimaticto host aviticultureOfhighquality.
Characteristic of all the wines of the Colli Tortonesi DOC is themarked sapidity, due to the clayey-marly soils, which transfer salts to the grapes and consequently to the winecharacteristicsunique. The wines obtained, thanks to their particular minerality, present strongpredispositionto aging, even in the case of whites.
The vineyards are located at about 300 meters above sea level on the Tortona Hills, on soils made up of clay and sand.
