Hi, I'm Matteo Circella the best sommelier in Italy Michelin Guide 2021.
To celebrate the award of Best Sommelier of Italy Michelin Guide I have created a selection of 3 bottles: A bubble, a white and a red that I would like to make you drink.
I chose them because they represent my idea of wine in a big way: Exceptional bottles , rare because of small productions and therefore truly artisanal . The perfect selection of wines to drink to start our journey together.

Bubble
The refermented in the bottle are bubbles with a history closely linked to Emilia, bubbles characterized by an always agile sip and a "bottom" that can be managed in two ways:
leave the bottle cool in vertical position, the first 2/3 glasses will be clear, agile then, from the middle of the bottle we will have more and more intense glasses almost cloudy, even the sip becomes more incisive, less didactic and more greedy.
take the bottle and start with a slow but effective movement to stir the yeasts on the bottom, in order to homogenize all the wine, we will immediately have a less limpid wine with great energy.
White
This wine has the ability to convey to me the territory from which it is proudly produced, drinking this bottle is like taking a real trip to those vineyards, breathing in those iodized and aromatic herbs smells. This is because this bottle is truly the truest and most direct expression of that territory. We often talk about local wine, but only in cases like these can we really find a direct connection capable of transporting us to those terraces looking and breathing the sea. This is truly a 100% natural wine.
Red
