How to pair PASTA AND WINE, tips for celebrating World Pasta Day!!
Have you ever thought how many combinations a simple pasta dish offers?
On 25 October 1988, in Naples, World Pasta Day was celebrated for the first time, the world day dedicated to pasta. The choice of the date was not accidental: in fact, the aim was to recognize the central role that pasta has had in culinary history and culture of humanity.
The objective of World Pasta Day is to enhance the qualities of pasta as a good, healthy, nutritious, accessible and sustainable food, drawing a bridge between its history and its future and in these 25 years the context linked to pasta has significantly expanded.
The data highlights the growing popularity of pasta around the world, for us Italians this is a heartfelt day, today we are here to create the perfect match for your favorite pasta dish.
World Pasta Day falls in October and in the middle of autumn I think of large red meat dishes, even better if game, so a truly curious combination is that between a plate of pasta with wild boar ragĂč and Luretta's Gutturnio Superiore Doc , a mix of Barbera and Croatina grapes that will make every bite increasingly tasty, enhancing the flavor of the game.

How important is pasta in our national diet?
According to statistics provided by the Italian Food Union and the International Pasta Organization, pasta has taken on an even more central role in the world diet, in fact global production has almost doubled, now standing at 17 million tonnes and here Italy stands out as a leader , both in terms of production, with 3.6 million tonnes, and in terms of per capita consumption, with an average of 23 kg per person.
So it's obvious that each of us has our favorite dish, mine is wild boar ragĂč, a nice plate of pasta with wild boar ragĂč in the middle of autumn is a real delicacy.
Pasta with wild boar ragĂč represents one of the most typical dishes of inland cuisine, this is a dish with a strong and enveloping flavour, it evokes sensations of warmth and although it may seem like an elite dish due to the presence of wild boar, in reality it has deep roots in popular cuisine, where wild boar hunting was a common practice in many forested areas.
Like any great traditional Italian dish, wild boar ragĂč with its robust character and its profile flavored by herbs and tomatoes, requires a wine with well-structured tannins and a certain body.
The choice falls on the Gutturnio Superiore Doc of Luretta , a traditional wine, so much so that the name derives from an ancient Roman vase used for pouring the wine itself during banquets.
Pasta with wild boar with this wine creates an unforgettable gastronomic experience: every sip of wine will echo the rustic and deep notes of the sauce, creating a harmony of flavors in the mouth that will be difficult to forget. We remain seasonal: one of the products of the moment is the mushroom, exquisite and tasty, it is suitable for sauce preparations, what do we pair with it?
Choose a Rossese di Dolceacqua, a typical red wine from Liguria, it is a wine with a ruby red color and a delicate but persistent aroma of red fruit and floral notes, with a dry, harmonious and pleasantly tannic flavour.
Tagliatelle with porcini ragout represents an elegant and refined dish, with a rich and deep flavor given by the porcini mushrooms which, with their fleshy consistency and earthy flavour, dominate the dish, making it essential to pair it with a wine that can balance and respect the delicacy of flavours.
My choice is the Rossese Novanta by Tenuta Anfosso , a wine that recounts the traditions and expressiveness of the best Rossese grapes on those "crus" that Luciano first and Alessandro now have looked after with ancient gestures.
This Rossese, with its fruity notes and balanced acidity, is an ideal choice, the acidity of the wine will refresh the palate, contrasting the richness of the ragĂč, while the fruity notes will complement the earthy flavors of the mushrooms.
Rossese Di Dolceacqua Doc Novanta 2018 - Tenuta Anfosso
We are talking about classics, pasta with garlic, oil, chilli, but with the creative addition of prawns, a recipe that is quick and easy to prepare as it is tasty and unique.
A reinterpretation of the classic pasta that makes an already delicious first course even tastier, which is precisely why our combination gains interest and deliciousness.
The Valle d'Aosta Pinot Nero Doc by Le Clocher has a fruity nose with hints of blackberry and black cherry, if aged spices and tar, while on the palate it is very balanced, warm and soft, an elegant wine to combine with the force of the sautéed garlic and oil, but able to caress the prawn without overpowering it.
This Pinot Noir has all the characteristics to guarantee all the balances in front of ingredients that are certainly important and which, if not well managed, can be difficult to taste.
