Description

Sauvignon Mirum grows on espalier farms in the municipality of Caldaro, the South Tyrolean homeland of white grapes . Unterhofer is a young reality but one that over the years has been able to enhance the typical mountain grapes , in this case not trivializing a vine known as sauvignon , on the contrary, enhancing the more complex aspects: the scent of elderberry and the note of nettle make it harmonious and curious to sip.

Vinification and Aging

To increase the quality of the grapes, the bunches are thinned out on the vine. In September, then, the destemming of the grapes takes place, the pressing of the berries and the fermentation of the must at a controlled temperature and the aging in large wooden barrels.

The Unterhofer family is based in South Tyrol, in Caldaro, one of the Italian capitals for white grape varieties.

Soil

The alluvial soil in calcareous gravel with a high percentage of sand characterizes the white grape vineyards.
