Vinification and Aging

The grapes are harvested from vineyards with an average age of 40 years and then pressed. The must is fermented after an accurate pied de cuve and at the end of fermentation it is transferred to the 15 hl oak barrel where it is aged for 10 months on the fine lees. It ends with a bottle aging of at least 4 months.

The vineyards are located in the municipality of Ranzo fraz. Bonfigliara and Ricci, in the province of Imperia.
