Bellavista's Alma Non Dosato represents "the purest side of Franciacorta" and is made according to the stylistic indications of Francesca Moretti, which is aimed at those looking for a more vertical sensorial profile, a bubble composed of 90% Chardonnay and Pinot Noir for the remaining 10% , coming solely from company vineyards.
A Franciacorta conceived as a response to the trend of the last decade which has seen zero dosage as the protagonist, i.e. sparkling wines in which there is no addition of dosage syrup, and therefore sugar, at disgorgement.
On the nose it shows a calibrated bouquet , where the notes of bread making and yeast immediately communicate a rare refinement, also made up of citrus tones and mineral and fragrant nuances, while the sip is supported by a well-measured structure , agile and elegant , persistent and pleasantly savory on the finish.
Why you should drink it
Because this is the product of a truly careful creative process, the result is simply superlative, a bubble that wants to become the symbol of the purest essence of the lands of Franciacorta , proposing a sip with which Bellavista drops its mask, retracing its history in contemporary key.
When to uncork it
A bubble for when you want to amaze your guests , to combine with haute cuisine, such as a truffle risotto or refined portions of sushi , I also recommend it with some preparation based on tuna sauce or with fried cod meatballs .
How to drink it
To be uncorked nice and fresh , at a temperature of 8°-10°C .
Vinification and refinement
The grapes are softly pressed, the must ferments in steel at a controlled temperature to maintain the integrity of the aromas , after the second fermentation, the wine rests on the yeasts for 30 months .
Territory
Located a few steps from Brescia and Lake Iseo , Franciacorta is an area famous for the production of the wine of the same name, Franciacorta DOCG ; it extends for approximately 200 km and embraces 19 municipalities in Brescia.
The influence of the lake climate with its temperature variations, the hilly landscape and the presence of heterogeneous plots with high permeability make this morainic area the ideal place to create an excellent wine .
Soil
The Franciacorta soil is essentially of morainic origin : it is in fact made up, for the most part, of deposits transported over the last 700,000 years by the ancient glacier, the Oglio glacier. It is a very particular terrain, rich in sand and silt , in which stones of different shapes, nature and colors are found.
