Description

The Akù name of this Vermentino vinified alone derives from " eri-akù " which meant " Servant of the moon god ", underlining how the wine has always been influenced by the moon and its phases and to respect this tradition the grapes are harvested completely in nocturnal .

The nose has fruity scents, with interesting aromatic notes of yellow peach, while on the palate it is pleasantly dry and mineral with an excellent structure and persistence.

Because this is a truly special Vermentino , both for the production ideology and for the aromatic characteristics enclosed by this wine, produced by the meeting of classicism and innovation .

When to uncork it

A fantastic bottle to be enjoyed in total relaxation or in good company, it is the ideal companion for fish dishes, vegetable -based first courses, but the real surprise will be when you combine it with typical Ligurian dishes .

How to drink it

Drink it chilled, at a temperature of around 12°-13° .

Vinification and Aging

Soft pressing with rest on the skins for 24 hours, the must is then sent to fermentation with selected yeasts at a controlled temperature in stainless steel tanks, the refinement lasts 6 months and is characterized by batonnage in the period following the alcoholic fermentation, ending with refinement of 2 months in the bottle.

Territory

We are on the first hills of Castelnuovo Magra , the vineyard extends for about one hectare in the locality of Tavolara, an area suited to the production of white wines with a typical geographical indication, where the exposure and the abundance of water make this land unique.

Soil

Clayey-pebbly soils with a rich presence of skeleton.
