Vinification and Aging
The " LocalitĂ d'Agosto " is produced exclusively in favorable years .
The grapes are harvested in 18 kg crates and only the first pressing is held ( 40% of the initial grapes ). The wine remains on the fine lees until the moment of tiraggio , where the â tirage syrup â is added. It is then bottled , capped with the crown cap and laid down in stacks for the second fermentation . The stacked bottles remain at least 36 months in contact with the yeasts before the â remouage â, with the aim of reaching 70 months in the future .
