Description

The Champagne Brut Special Cuvée is the emblem and symbol of the great Bollinger maison , an absolute glory of Champagne that began in 1911 at the suggestion of an English agent of the Bollinger family and has never stopped being produced since then, a long united tradition to modernization, great passion and the great potential of the French terroir.

The Cuvée is composed of 60% Pinot Noir , 25% Chardonnay and 15% Pinot Meunier grapes, almost entirely from Grand and Premiere Cru vineyards , this union gives hints of ripe fruit, spices and candied apples creating an aromatic atmosphere rich in details, while in the mouth it envelops the palate with a creamy and velvety touch , revealing a great balance between structure, power and liveliness.

This is an extraordinary bubble that comes from an exclusive recipe that is handed down from year to year, through generations and generations, and which gives rise to unique bottles that have become reference models for all the bubbles in the world.

A perfect bubble to drink immediately, excellent for fish , shellfish and white meat dishes.

To be uncorked nice and fresh , at a temperature of 8°-10°C .

Vinification and refinement

This Champagne is the result of a blend of freshly harvested grapes. The refinement in the cellar which doubles the minimum required by the denomination completes the production process and gives unique and inimitable characteristics.

Territory

We are in Ay , one of the historic towns in the heart of Champagne , here is the Maison Bollinger, founded in 1829 when they chose to join forces with the German Joseph Bollinger and the wine enthusiast Paul Ranaudin.

Over the years, after having managed to successfully impose his own bubbles especially on the English and American markets , it was Joseph Bollinger himself who became the symbolic man of the Maison.

Soil

The composition of the soil is predominantly made up of limestone , chalk and marl . Gypsum has the property of retaining water by capillary action and its high porosity is a water reservoir which gives the plant an adequate supply even during the driest summers.
