Fermentation in stainless steel, once the alcoholic fermentation has started, the daily pumping overs begin in order to facilitate the extraction from the skin of the color and the primary aromas of the grapes, after 8-10 days the fermentation ends and we move on to the maceration which lasts average 25-30 days . The refinement is 30 months in wood , followed by the bottling and the very important refinement in the bottle for a further 8-10 months .
