PIZZA and WINE: the perfect pairing exists, find out what to uncork!
Pizza, a masterpiece of Italian cuisine, but have you ever thought that a glass of wine can make it even more special?
In the previous article that you can read at THIS LINK we talked about some pairings and today, on the occasion of World Pizza Day, we discover other tasty tips for uncorking the right wine with your favorite pizza, transforming a simple meal into an extraordinary experience.
Maybe you have never thought about it, because the most common pairing is with beer. Yet, choosing the right wine can be a surprisingly natural and winning choice.
Let's dispel a cliché right away: pizza and beer are not always the perfect pair. Yeast on yeast weighs down the stomach, while a well-selected wine can enhance flavors and consistencies without weighing you down. Every pizza deserves its wine, following a few simple rules of balance.
Let's take a concrete example: for a pizza with prosciutto or other tasty cured meats , Lambrusco Rosé Igp from Cantina San Martino is an ideal companion. Its effervescence and freshness contrast the richness of the condiments, while the light sweetness of this Emilian Lambrusco balances the strong taste of the cured meats, creating a perfect harmony.
What elements should be considered when pairing wine with pizza?
Just like any other dish, the principles of contrast and analogy apply to pizza. Contrast allows you to balance the opposite sensations between wine and food, while analogy seeks harmony between similar characteristics.
A successful pairing must create a balance between the structure of the wine and the intensity of the dish. A wine that is too full-bodied risks covering the flavors of a simple pizza, while a wine that is too light does not enhance richer pizzas.
So if you want to go for a great classic, like pizza with prosciutto, then I recommend something special like Lambrusco Rosé IGP by Cantina San Martino. This sparkling wine, typical of Emilia-Romagna, thanks to its lively acidity and fine perlage, is perfect with pizzas with lively toppings. Lambrusco Rosé, in particular, with its light sweetness, contrasts the strength of the cured meats and enhances their intense flavors.
This wine stands out for its bright pink color and fine and persistent perlage. On the nose it offers elegant and fresh notes, while in the mouth it is lively, soft and delicately sparkling, with a perfect balance between acidity and sweetness. This characteristic makes it ideal to accompany rich pizzas.
This Lambrusco Rosé, thanks to its characteristics, cleanses the palate and enhances every bite, offering a complete tasting experience.

Speaking of rich pizzas: for the 4 seasons?
This pizza, also known as Capricciosa, is enriched with artichokes, cooked ham, olives and mushrooms. Tomato and mozzarella base, the most magical of partnerships in the world of pizza.
In this case, choose light red wines, ideal for combining the different flavors of the four ingredients. The ideal is a wine like Dolcetto, in this case I recommend Dolcetto D'Alba Doc by Fortemasso .
Low acidity, bouquet of various and intense aromas, persistent and with a round and soft sip. The secret of this wine lies in the meticulous care during each phase of production, furthermore this is an immediate and drinkable red wine, a wine for every meal and every occasion.
Dolcetto D'Alba Doc - Fortemasso
For the 4 formaggi we are talking about a triumph of melting: mozzarella, stracchino, gorgonzola and fontina. The pairing with the 4 formaggi requires a wine that can balance the intense notes of the ingredients, refreshing the palate and acting as a counterpoint to the fattiness of the dairy products. Ideal in this case is a lively and pop bubble.
Here I choose to recommend a bottle-fermented wine, a very special pairing. The four cheeses is therefore perfect with a wine characterized by a lively and cheerful foam, such as the Bianco Frizzante Lunatico by Ezio Poggio .
This wine is made from Timorasso grapes, a Piedmontese gem. Production using the Ancestral Method makes this wine unique and absolutely worth trying, not to mention that with its balance and creaminess it splendidly accompanies a rich dish like the four cheeses.
Sparkling White Moody - Ezio Poggio
The pairing possibilities are endless. Just look at the characteristics of the pizza and choose a wine that complements its flavors, without prevailing. The world of pizza and wine pairings is waiting to be explored. Play with flavors, experiment and find the perfect combination for your palate.
