Description
The Assajè of Cantina Capichera comes from the pure use of a large red grape variety typical of Sardinia, the Carignano , this variety is grown in vineyards located in Sulcis and in Gallura .
The word Assajè in Gallurese means " it is already something ", a name that outlines a strongly territorial wine, which brings the beauty of Sardinian Gallura back to life through a representative and iconic profile.
An important and structured Sardinian wine , the bouquet can be perceived ethereal and vinous notes, where red fruit and spices alternate with a range of well-orchestrated aromas. The taste is round and balanced with a warm sip, characterized by a savory vein and moderate tannins.

Because this is THE product of decisive and convinced choices , which are based on an agronomic management attentive to the smallest details and on equally obsessive winemaking processes.

When to uncork it
The Assaje di Capichera is to be combined with land cuisine and above all with red meat -based main courses, if you want to make a splash, try it with a nice grilled beef rib .
How to drink it
To enjoy it at its best, I suggest you let the wine "breathe" at least 15-30 minutes before serving it. Remember to serve it at 18°-20°C .
Vinification and Aging
Fermentation and maceration in steel tanks for about 3 weeks, aging in barrique for 12 months .

The vineyards in which this Assaje Carignano di Capichera is produced are vineyards exposed to East-South/East between 20 and 100m. asl.

The soil is typical of Gallura which is sandy and rocky , originating from granite decay, very draining and rich in mineral substances .
